The
traditional cousine of the area prides
itself on perseiving ancient recips
which are repeated accor ding
to the passage of seasons, rivisited for
their purity by the able hands of chefs.
Ravioli filled with stewed meat, rich
risottos with mushrooms, aromatic herbs,
fragrant truffles, appetizing cheesesand
flavorful processed meats, above all the
renowed Varzi salame.

People
used to call dishes served with
plenty
of butte r
and cheese
'alla
oltrepò
pavese'.
Today, butter and
cheese are still among the basic
ingredients in gastronomy
of Oltrepò, made up of tasty recipes
deeply rooted in traditional and simple
peasant cuisine. This was influenced
over the years by and mixed with that of
nearly Emilia and the courts of France,
Spain and Austria - the history of which
has close links with that of the region.
During the course of the year
Oltrepò organise a number of food and
drink events celebrating the local
cuisine. These are becoming increasingly
successful and offer an opportunity to
taste traditional and seasonal recipes. |
Although rice , wines
and grapes from Oltrepò are the
principle products for which the
Oltrepò Pavese - at the forefront of
farming production on a national
level - is known, the tables of
Oltrepò Pavese are loaded with many
other local
products that create a
unique taste.
The asparagus of Cilavegna and the
red onions of Breme, the truffles,
mushrooms and chestnuts from the
Oltrepò hills and mountains, and the
mushrooms from the Staffora valley.
In addition to these natural
products come manmade ones - tasty
cheeses, delicious salami and
excellent wine.
The dairies, large and small,
scattered across the zone, produce
soft fresh cheeses (Crescenza,
Robiolina and Ricotta), hard
semi-ripe cheeses (Taleggio, Robiola,
Tometta) Grana Padano and goat's
cheese (prized and produced in small
quantities).
One of the typical products of the
area is 'Nisso', from Menconico, in
the Apennine section of Oltrepò,
which, in July, holds a folk
festival for its local pride and
joy, 'Nisso' cheese; made from cow
and sheep's milk and ripened slowly
it has quite an unusual and tangy
taste. Many preserved meats are also
produced in the area - sausage,
salamelle,
pancetta, coppa
and salami. The most
famous sausage is the
salame
di Varzi
and its preparation
apparently descends from Longobard
times. It is protected by a
Consortium and has obtained
Protected designation of origin (POO)
classification. Its sweet delicate
flavour is based on a complicated
blend of ingredients: the best parts
of the pig, coarsely minced, sea
salt, sodium, nitrate, black
peppercorns, infused garlic and
filtered red wine, seasoned slowly
in the special Varzi air, a
combination of mountain and sea
breezes.
